A galette is a large, thin, pancake shaped wrap made from healthy buckwheat. Despite it's name, buckwheat is naturally wheat and gluten free and so is suitable for people who are wheat intolerant or coeliac. In Brittany, the traditional home of galettes, they are usually filled with savoury fillings but, for those with a sweet tooth they are also delicious with a sweet filling - maple syrup and banana is a favourite! By contrast, the traditional, sweet French crepe or pancake is made from fine wheat flour, eggs, milk, sugar and, sometimes, butter too, to make a light, thin crispy pancake. Just right for Shrove Tuesday feasts on Pancake Day!
